- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 cup unsalted butter
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 cup milk
- 1 cup pumpkin puree
- 1 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1 cup chopped pecans
Instructions
- Prepare the Cake Batter: Cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Gradually add milk and sifted flour with baking powder until just combined.
- Divide the Batter: Separate the batter into three equal portions, pour one portion into a prepared cake pan. Bake at 350°F (175°C) for 25-30 minutes.
- Make the Pumpkin Layer: Combine pumpkin puree, brown sugar, eggs, and spices. Spread over the first cake layer after cooling.
- Bake Remaining Layers: Repeat for the pecan and apple pie layers in separate pans. Cool completely.
- Layer and Assemble: Stack layers in the order: cake, pumpkin, cake, pecan, and cake topped with apple.
- Chill and Serve: Chill in the refrigerator for a few hours or overnight. Slice and serve.
Notes
For a gluten-free version, use gluten-free flour. You can substitute coconut milk for dairy if desired.
