- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 2 tablespoons espresso powder
- 1 cup mascarpone cheese
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, ensuring they’re well combined after each addition.
- Mix in the vanilla extract and espresso powder until fully incorporated.
- Gradually add the flour and cocoa powder, stirring gently until just combined.
- Fold in the mascarpone cheese until smooth.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until edges are set but centers are slightly soft.
- Allow to cool on baking sheets for a couple of minutes before transferring to wire racks to cool completely.
- Dust with cocoa powder before serving.
Notes
Chill the dough for at least 30 minutes before baking to enhance the flavors and prevent spreading.
