Description

Delicious cookies blending rich espresso and creamy mascarpone, reminiscent of the classic tiramisu dessert.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons espresso powder
  • 1 cup mascarpone cheese
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, ensuring they’re well combined after each addition.
  4. Mix in the vanilla extract and espresso powder until fully incorporated.
  5. Gradually add the flour and cocoa powder, stirring gently until just combined.
  6. Fold in the mascarpone cheese until smooth.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until edges are set but centers are slightly soft.
  9. Allow to cool on baking sheets for a couple of minutes before transferring to wire racks to cool completely.
  10. Dust with cocoa powder before serving.

Notes

Chill the dough for at least 30 minutes before baking to enhance the flavors and prevent spreading.
