Description

A comforting and flavorful Tomato Basil Soup that brings warmth and nostalgia to any table.


Ingredients

  • 2 lbs ripe tomatoes, diced (or 2 cans San Marzano tomatoes)
  • 1 cup fresh basil leaves
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté chopped onions with a pinch of salt until translucent, about 5 minutes.
  2. Stir in minced garlic and sauté until fragrant, about 1 minute.
  3. Add the diced tomatoes and let simmer for 10-15 minutes until softened.
  4. Pour in the broth, bring to a gentle boil, then reduce heat and let simmer for another 20-30 minutes.
  5. Add fresh basil leaves just before blending.
  6. Blend the soup until smooth using an immersion blender or in batches with a traditional blender.
  7. Adjust seasoning with salt and pepper and serve drizzled with olive oil.

Notes

For a creamier texture, swirl in heavy cream or non-dairy alternatives; add a squeeze of lemon juice for brightness or red pepper flakes for spice.
