Ingredients

- 2 lbs ripe tomatoes, diced (or 2 cans San Marzano tomatoes)
- 1 cup fresh basil leaves
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 4 cups vegetable or chicken broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat and sauté chopped onions with a pinch of salt until translucent, about 5 minutes.
- Stir in minced garlic and sauté until fragrant, about 1 minute.
- Add the diced tomatoes and let simmer for 10-15 minutes until softened.
- Pour in the broth, bring to a gentle boil, then reduce heat and let simmer for another 20-30 minutes.
- Add fresh basil leaves just before blending.
- Blend the soup until smooth using an immersion blender or in batches with a traditional blender.
- Adjust seasoning with salt and pepper and serve drizzled with olive oil.
Notes
For a creamier texture, swirl in heavy cream or non-dairy alternatives; add a squeeze of lemon juice for brightness or red pepper flakes for spice.
