- 1 lb (450g) Ground Beef
- 1 cup Long-Grain Rice
- 2 medium Tomatoes, diced
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Sharp Cheddar Cheese, shredded
- 1 cup Mozzarella Cheese, shredded
- 1 tsp Cumin
- 1 tsp Paprika
- Salt and Pepper, to taste
- Fresh Parsley or Basil, for garnish
- Olive Oil, for cooking
Instructions
- Prepare the Rice: Cook your rice according to package instructions and set aside.
- Cook the Beef: In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent, then add garlic and cook until fragrant. Add ground beef and cook until browned.
- Stir in the Tomatoes and Spices: Add diced tomatoes, cumin, paprika, salt, and pepper. Simmer for about 10 minutes.
- Combine with Rice: In a baking dish, mix the cooked rice into the beef-tomato mixture.
- Add Cheese and Bake: Sprinkle cheese on top and cover with foil. Bake at 350°F (175°C) for 30 minutes, then remove foil and bake for another 10 minutes.
- Garnish and Serve: Let it sit for a few minutes, then sprinkle with fresh herbs before serving.
Notes
For an extra crunch, add breadcrumbs on top before baking.
