Description

Ingredients

  • 1 lb (450g) Ground Beef
  • 1 cup Long-Grain Rice
  • 2 medium Tomatoes, diced
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1 cup Mozzarella Cheese, shredded
  • 1 tsp Cumin
  • 1 tsp Paprika
  • Salt and Pepper, to taste
  • Fresh Parsley or Basil, for garnish
  • Olive Oil, for cooking

Instructions

  1. Prepare the Rice: Cook your rice according to package instructions and set aside.
  2. Cook the Beef: In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent, then add garlic and cook until fragrant. Add ground beef and cook until browned.
  3. Stir in the Tomatoes and Spices: Add diced tomatoes, cumin, paprika, salt, and pepper. Simmer for about 10 minutes.
  4. Combine with Rice: In a baking dish, mix the cooked rice into the beef-tomato mixture.
  5. Add Cheese and Bake: Sprinkle cheese on top and cover with foil. Bake at 350°F (175°C) for 30 minutes, then remove foil and bake for another 10 minutes.
  6. Garnish and Serve: Let it sit for a few minutes, then sprinkle with fresh herbs before serving.

Notes

For an extra crunch, add breadcrumbs on top before baking.
