Description

A rich and creamy Tomato Bisque, perfect for warming your heart and soul.


Ingredients

Scale
  • 4 cups ripe tomatoes (fresh or canned)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, chopped
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Fresh basil and thyme, to taste
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and carrot, cooking until soft and fragrant.
  2. Stir in minced garlic and sauté for an additional minute until aromatic. Add tomatoes and cook down until they release their juices.
  3. Add vegetable or chicken broth and bring to a gentle simmer. Cook for 20–25 minutes.
  4. Using an immersion blender, carefully puree the soup to your desired consistency.
  5. Return the pot to low heat, stir in heavy cream, and season with salt, pepper, and fresh herbs.
  6. Serve warm, garnished with olive oil or basil, alongside crusty bread or a fresh salad.

Notes

For a lighter version, substitute half-and-half for heavy cream. This bisque can be easily frozen for up to three months.
