Ingredients

- 4 cups ripe tomatoes (fresh or canned)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, chopped
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Fresh basil and thyme, to taste
- Salt and pepper, to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and carrot, cooking until soft and fragrant.
- Stir in minced garlic and sauté for an additional minute until aromatic. Add tomatoes and cook down until they release their juices.
- Add vegetable or chicken broth and bring to a gentle simmer. Cook for 20–25 minutes.
- Using an immersion blender, carefully puree the soup to your desired consistency.
- Return the pot to low heat, stir in heavy cream, and season with salt, pepper, and fresh herbs.
- Serve warm, garnished with olive oil or basil, alongside crusty bread or a fresh salad.
Notes
For a lighter version, substitute half-and-half for heavy cream. This bisque can be easily frozen for up to three months.
