Ingredients
- Fresh salmon fillet (skin-on)
- Cedar planks (or maple/cherry wood)
- Fresh herbs (dill or thyme)
- Garlic
- Olive oil
- Citrus juice (lemon or orange)
- Salt
- Pepper
- Brown sugar or smoked paprika (optional)
Instructions
- Soak the cedar planks in water for at least two hours.
- Rinse the salmon under cold water and pat dry.
- Drizzle olive oil over the salmon, then season with salt, pepper, and herbs.
- Preheat the Traeger grill to 225°F for about 15 minutes.
- Place soaked cedar planks on the grill grates for 5 minutes.
- Lay the salmon on the planks, skin-side down, and close the lid.
- Smoke the salmon for approximately 1 to 1.5 hours until the internal temperature reaches 145°F.
- Carefully remove the planks and serve garnished with lemon wedges and fresh herbs.

For best results, monitor the internal temperature using a meat thermometer. Avoid overcrowding on the grill to ensure proper smoke circulation.
