- 1 lb ground turkey
- 1 cup chopped cranberries (fresh or dried)
- 1 cup bread crumbs
- 1 onion, diced
- 2 cloves garlic, minced
- 2 eggs
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- Salt and pepper to taste
- For the gravy: 2 tablespoons butter, 2 tablespoons flour, 2 cups broth
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, melt a tablespoon of butter over medium heat. Add diced onions and minced garlic, sautéing until golden.
- In a large bowl, combine ground turkey, sautéed onions and garlic, cranberries, bread crumbs, eggs, and herbs. Season with salt and pepper.
- Shape the mixture into a loaf and place in a loaf pan or shape free-form on a baking sheet.
- Bake for about 1 hour, or until the internal temperature reaches 165°F (74°C).
- For the gravy, melt butter in a pan, whisk in flour until golden, then slowly add broth, whisking until thickened. Season with salt and pepper.
- Let the meatloaf rest for 10 minutes before slicing and serving with gravy.
Notes
For a gluten-free option, use almond flour or gluten-free bread crumbs. You can also substitute ground turkey with ground chicken.
