Ingredients

  • 1 lb ground turkey
  • 1 cup chopped cranberries (fresh or dried)
  • 1 cup bread crumbs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • For the gravy: 2 tablespoons butter, 2 tablespoons flour, 2 cups broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt a tablespoon of butter over medium heat. Add diced onions and minced garlic, sautéing until golden.
  3. In a large bowl, combine ground turkey, sautéed onions and garlic, cranberries, bread crumbs, eggs, and herbs. Season with salt and pepper.
  4. Shape the mixture into a loaf and place in a loaf pan or shape free-form on a baking sheet.
  5. Bake for about 1 hour, or until the internal temperature reaches 165°F (74°C).
  6. For the gravy, melt butter in a pan, whisk in flour until golden, then slowly add broth, whisking until thickened. Season with salt and pepper.
  7. Let the meatloaf rest for 10 minutes before slicing and serving with gravy.

Notes

For a gluten-free option, use almond flour or gluten-free bread crumbs. You can also substitute ground turkey with ground chicken.
