- 1 lb ground turkey
- 1 cup breadcrumbs
- 2 tablespoons milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 egg, beaten
- 1/4 cup fresh sage, chopped
- 1/4 teaspoon nutmeg
- 1 can (15 oz) pumpkin puree
- 1 cup chicken or vegetable broth
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- Combine ground turkey, breadcrumbs, milk, chopped onions, minced garlic, beaten egg, chopped sage, and nutmeg in a large mixing bowl and mix until just combined.
- Form the mixture into 1-inch meatballs and place them on a lined baking sheet.
- Bake in the oven for about 20 minutes, or until golden brown and cooked through.
- Heat olive oil in a large skillet over medium heat and sauté onions until translucent, then add garlic and cook until fragrant.
- Stir in pumpkin puree, broth, salt, pepper, and sage. Let it simmer for about 10 minutes.
- Add the baked meatballs to the sauce and let them cook together for a few minutes.
- Serve in bowls, garnished with additional sage or parmesan.
Notes
For additional flavor, consider mixing in cooked mushrooms or serving over pasta or polenta.
