- 1 lb ground turkey
- 1 cup breadcrumbs
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 egg
- 2 cups pumpkin puree
- 1/4 cup fresh sage, chopped
- Salt, to taste
- Pepper, to taste
- Olive oil, for sautéing
- 1/4 cup vegetable broth
- Parmesan cheese, for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Mix the ground turkey, breadcrumbs, minced garlic, chopped onion, egg, salt, pepper, and half of the sage in a large bowl.
- Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
- Bake the meatballs for about 20 minutes, until golden brown and cooked through.
- Prepare the sauce by heating olive oil in a skillet over medium heat. Sauté the remaining garlic and onion for about 2 minutes.
- Stir in the pumpkin puree and vegetable broth; bring to a gentle simmer.
- Add the remaining sage, and season with salt and pepper.
- Combine the meatballs with the sauce and let them simmer for an additional 5-10 minutes.
- Serve the meatballs over pasta or with crusty bread, topped with Parmesan (if desired).
Notes
To enhance the sauce, consider adding a splash of cream or a hint of nutmeg.
