- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup cremini mushrooms, sliced
- 1 cup shiitake mushrooms, sliced
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 4 tablespoons olive oil
- 1 cup chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice each chicken breast horizontally and flatten with a meat mallet.
- Heat olive oil in a skillet, then add minced garlic and mushrooms, cooking until golden.
- Lay out the chicken on a cutting board, adding the sautéed mushrooms and cheese.
- Roll the chicken tightly, securing it with kitchen twine.
- Brown the roulade in the skillet on all sides.
- Transfer to a baking dish, adding chicken broth and cream, then cover with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until cooked through.
- Make the sauce by deglazing the skillet with chicken broth and adding remaining mushrooms and cream.
- Slice the roulade and serve with sauce and fresh herbs on top.
Notes
Let the roulade rest before slicing to keep it juicy. Serve with a side salad or roasted vegetables.
