Description

A rich and flavorful roulade filled with tender chicken, sautéed mushrooms, and fresh herbs, perfect for family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup cremini mushrooms, sliced
  • 1 cup shiitake mushrooms, sliced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice each chicken breast horizontally and flatten with a meat mallet.
  3. Heat olive oil in a skillet, then add minced garlic and mushrooms, cooking until golden.
  4. Lay out the chicken on a cutting board, adding the sautéed mushrooms and cheese.
  5. Roll the chicken tightly, securing it with kitchen twine.
  6. Brown the roulade in the skillet on all sides.
  7. Transfer to a baking dish, adding chicken broth and cream, then cover with foil and bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until cooked through.
  9. Make the sauce by deglazing the skillet with chicken broth and adding remaining mushrooms and cream.
  10. Slice the roulade and serve with sauce and fresh herbs on top.

Notes

Let the roulade rest before slicing to keep it juicy. Serve with a side salad or roasted vegetables.
