Description

A rich and comforting beef stew filled with tender short ribs, earthy vegetables, and aromatic herbs, perfect for creating warm family memories.


Ingredients

  • 3 lbs short ribs
  • 2 large yellow onions, diced
  • 4 cloves fresh garlic, minced
  • 4 carrots, chopped
  • 4 medium potatoes, diced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 4 cups beef broth
  • 1 cup dry red wine (optional)
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Heat a heavy-bottomed pot or Dutch oven over medium-high heat. Season the short ribs with salt and pepper and sear them until deep brown on all sides. Remove and set aside.
  2. Add diced onions to the pot and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute.
  3. Toss in the chopped carrots and potatoes, stirring to coat them with the aromatics.
  4. If using, pour in the red wine and allow it to simmer for a few minutes.
  5. Return the short ribs to the pot and add beef broth, tomato paste, and herbs. Stir and bring to a gentle simmer.
  6. Cover the pot, reduce heat, and let simmer for 2-3 hours until the short ribs are tender.
  7. Adjust seasoning as necessary and serve with crusty bread.

Notes

For an alcohol-free version, skip the red wine and increase the beef broth. This stew can be made in a slow cooker or Instant Pot as well.
