- 3 lbs short ribs
- 2 large yellow onions, diced
- 4 cloves fresh garlic, minced
- 4 carrots, chopped
- 4 medium potatoes, diced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 2 bay leaves
- 4 cups beef broth
- 1 cup dry red wine (optional)
- 2 tablespoons tomato paste
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Heat a heavy-bottomed pot or Dutch oven over medium-high heat. Season the short ribs with salt and pepper and sear them until deep brown on all sides. Remove and set aside.
- Add diced onions to the pot and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute.
- Toss in the chopped carrots and potatoes, stirring to coat them with the aromatics.
- If using, pour in the red wine and allow it to simmer for a few minutes.
- Return the short ribs to the pot and add beef broth, tomato paste, and herbs. Stir and bring to a gentle simmer.
- Cover the pot, reduce heat, and let simmer for 2-3 hours until the short ribs are tender.
- Adjust seasoning as necessary and serve with crusty bread.
Notes
For an alcohol-free version, skip the red wine and increase the beef broth. This stew can be made in a slow cooker or Instant Pot as well.
