- 2 cups heavy cream
- 1/2 cup sugar
- 1 tablespoon gelatin
- 1 cup whole milk
- 2 vanilla beans
- Optional: splash of milk or cream for blending
Instructions
- Bloom the gelatin in a small bowl with a couple of tablespoons of warm water and set aside.
- In a saucepan, combine heavy cream, whole milk, and sugar over medium heat until steaming. Do not boil.
- Scrape the seeds from the vanilla beans and add both seeds and pods to the mixture.
- Simmer for a few minutes, then remove from heat. Discard the pod and stir in the bloomed gelatin until fully dissolved.
- Pour the mixture into prepared molds and cool to room temperature before refrigerating for at least four hours or until set.
- To serve, run a knife around the edge, dip molds in warm water briefly, and invert onto plates. Garnish with fresh fruit or honey if desired.
Notes
For lighter versions, use half-and-half or dairy-free options like almond milk. Allow sufficient setting time for the best texture.
