- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 4 large eggs
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 cup milk
- 2 teaspoons pure vanilla extract
- 1/2 cup finely chopped pistachios
- 1 cup milk or cream for custard
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Add in the eggs one at a time, beating well after each addition. Mix in the pure vanilla extract.
- Gradually add in the flour, baking powder, and baking soda, alternating with the milk, until everything is just combined.
- Pour equal portions of the batter into the prepared cake pans and bake for about 25-30 minutes or until a toothpick comes out clean.
- For the custard, heat milk or cream in a saucepan until warm. In another bowl, whisk egg yolks and sugar until pale, then gradually add the warm milk while whisking.
- Return to the saucepan and cook on low heat, stirring constantly until it thickens. Remove from heat and stir in chopped pistachios and vanilla extract.
- Once the cakes are cool, level the tops. Assemble by placing one cake layer on a plate, adding custard on top, then the second layer with more custard. Garnish with pistachios and powdered sugar.
