Ingredients

  • 1/2 cup banana ketchup
  • 1/4 cup soy sauce or tamari
  • 3 cloves garlic, finely chopped
  • 1 medium onion, chopped
  • 1 cup mixed vegetables (bell peppers, carrots, zucchini)
  • 1 cup mushrooms, sliced
  • 2 tbsp olive oil or vegetable oil
  • Salt and black pepper to taste

Instructions

  1. Boil a large pot of salted water, add spaghetti, and cook according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and onions, sauté until fragrant and translucent.
  3. Add mixed vegetables and mushrooms. Sauté for 5-7 minutes, until tender.
  4. Pour in banana ketchup and soy sauce; stir to combine, adjusting for taste and consistency.
  5. Combine cooked spaghetti with the sauce in the skillet, tossing gently to coat.
  6. Serve hot, garnished with fresh herbs or a squeeze of lime if desired.

Notes
