- 1/2 cup banana ketchup
- 1/4 cup soy sauce or tamari
- 3 cloves garlic, finely chopped
- 1 medium onion, chopped
- 1 cup mixed vegetables (bell peppers, carrots, zucchini)
- 1 cup mushrooms, sliced
- 2 tbsp olive oil or vegetable oil
- Salt and black pepper to taste
Instructions
- Boil a large pot of salted water, add spaghetti, and cook according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and onions, sauté until fragrant and translucent.
- Add mixed vegetables and mushrooms. Sauté for 5-7 minutes, until tender.
- Pour in banana ketchup and soy sauce; stir to combine, adjusting for taste and consistency.
- Combine cooked spaghetti with the sauce in the skillet, tossing gently to coat.
- Serve hot, garnished with fresh herbs or a squeeze of lime if desired.
Notes
Add toasted sesame seeds or chili flakes for extra flavor. Serve family-style for a communal dining experience.
