Description

Cheerful bell peppers filled with a savory mixture of grains and vegetables, perfect for Halloween and family gatherings.


Ingredients

  • 4 bell peppers (orange or yellow)
  • 1 cup quinoa or brown rice
  • 1 cup diced mushrooms (cremini or shiitake)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes or zucchini
  • Fresh parsley or basil, chopped
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp cayenne (optional)
  • Salt and pepper, to taste
  • 1/4 cup nuts or seeds (optional)
  • Vegetable broth or water

Instructions

  1. Preheat oven to 375°F (190°C). Cut tops off the peppers and remove seeds.
  2. In a skillet, heat oil over medium heat. Sauté diced onions and minced garlic until softened.
  3. Add diced mushrooms and other vegetables; cook until tender.
  4. Stir in grains and spices, taste for seasoning, and remove from heat.
  5. Stuff peppers with the mixture, packing it in well and placing them in a baking dish.
  6. Add a splash of vegetable broth or water, cover with foil, and bake for 25-30 minutes until peppers are tender.
  7. Remove foil for the last 5-10 minutes to golden the tops, and garnish with fresh herbs before serving.

Notes

Feel free to substitute quinoa with lentils for a protein boost or replace grains with diced vegetables for a low-carb option.
