- 4 bell peppers (orange or yellow)
- 1 cup quinoa or brown rice
- 1 cup diced mushrooms (cremini or shiitake)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes or zucchini
- Fresh parsley or basil, chopped
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp cayenne (optional)
- Salt and pepper, to taste
- 1/4 cup nuts or seeds (optional)
- Vegetable broth or water
Instructions
- Preheat oven to 375°F (190°C). Cut tops off the peppers and remove seeds.
- In a skillet, heat oil over medium heat. Sauté diced onions and minced garlic until softened.
- Add diced mushrooms and other vegetables; cook until tender.
- Stir in grains and spices, taste for seasoning, and remove from heat.
- Stuff peppers with the mixture, packing it in well and placing them in a baking dish.
- Add a splash of vegetable broth or water, cover with foil, and bake for 25-30 minutes until peppers are tender.
- Remove foil for the last 5-10 minutes to golden the tops, and garnish with fresh herbs before serving.
Notes
Feel free to substitute quinoa with lentils for a protein boost or replace grains with diced vegetables for a low-carb option.
