Colorful bell peppers filled with a savory mixture of mushrooms, quinoa, and spices, shaped like jack-o’-lanterns for a festive Halloween dish.


Ingredients

  • 4 large bell peppers (orange or yellow)
  • 1 cup quinoa or rice
  • 1 cup brown or shiitake mushrooms, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh herbs (cilantro or parsley) for garnish
  • Olive oil for sautéing
  • Vegetable broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the bell peppers and slice off the tops. Scoop out the inner seeds and membranes.
  3. In a skillet, heat olive oil and sauté onions and garlic until translucent. Add mushrooms and cook until browned.
  4. Stir in quinoa or rice and spices. Cook until heated through.
  5. Stuff each pepper with the filling and place upright in a baking dish with a splash of vegetable broth.
  6. Cover with foil and bake for 30 minutes. Uncover and bake for an additional 10 minutes.
  7. Garnish with fresh herbs before serving.

Notes

For added flexibility, feel free to substitute quinoa with couscous or lentils. Ensure the filling is well-seasoned for maximum flavor.
