- 4 large bell peppers (orange or yellow)
- 1 cup quinoa or rice
- 1 cup brown or shiitake mushrooms, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh herbs (cilantro or parsley) for garnish
- Olive oil for sautéing
- Vegetable broth
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the bell peppers and slice off the tops. Scoop out the inner seeds and membranes.
- In a skillet, heat olive oil and sauté onions and garlic until translucent. Add mushrooms and cook until browned.
- Stir in quinoa or rice and spices. Cook until heated through.
- Stuff each pepper with the filling and place upright in a baking dish with a splash of vegetable broth.
- Cover with foil and bake for 30 minutes. Uncover and bake for an additional 10 minutes.
- Garnish with fresh herbs before serving.
Notes
For added flexibility, feel free to substitute quinoa with couscous or lentils. Ensure the filling is well-seasoned for maximum flavor.
