Description

Delightful vegan rolls made with ube, creating a soft and fluffy texture that’s perfect for any occasion.

Ingredients

Scale
  • 1 cup ube (purple yam), fresh or canned
  • 3 cups all-purpose flour (or whole wheat/gluten-free blend)
  • 1 packet instant yeast
  • 1 cup plant-based milk (almond, soy, or oat)
  • 1/4 cup granulated sugar (or coconut sugar)
  • 1 tsp salt
  • 1/4 cup vegan butter (or coconut oil)

Instructions

  1. Prepare the ube. If using fresh, peel and cube, then boil until tender. Let cool and mash until smooth. If canned, ensure it’s well-drained and mashed.
  2. Combine warm plant-based milk and sugar in a large bowl. Stir in yeast and let sit for 5-10 minutes until bubbly.
  3. Mix all-purpose flour and salt in a separate bowl. Add the mashed ube and melted vegan butter to the yeast mixture, then incorporate flour gradually until a dough forms.
  4. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a cloth, and let rise in a warm spot for about 60 minutes or until doubled.
  6. Punch down the risen dough and turn onto a floured surface. Shape into a log, cut into pieces, and roll each into a ball before placing in a greased baking dish.
  7. Cover the rolls and let rise again for another 30 minutes.
  8. Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes until golden brown.
  9. Cool slightly before serving, adding a touch of vegan butter while warm.

Notes

Ensure real ube is used instead of extract for the best flavor. Over-kneading can lead to dense rolls.
