- 1 cup ube (purple yam), fresh or canned
- 3 cups all-purpose flour (or whole wheat/gluten-free blend)
- 1 packet instant yeast
- 1 cup plant-based milk (almond, soy, or oat)
- 1/4 cup granulated sugar (or coconut sugar)
- 1 tsp salt
- 1/4 cup vegan butter (or coconut oil)
Instructions
- Prepare the ube. If using fresh, peel and cube, then boil until tender. Let cool and mash until smooth. If canned, ensure it’s well-drained and mashed.
- Combine warm plant-based milk and sugar in a large bowl. Stir in yeast and let sit for 5-10 minutes until bubbly.
- Mix all-purpose flour and salt in a separate bowl. Add the mashed ube and melted vegan butter to the yeast mixture, then incorporate flour gradually until a dough forms.
- Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a cloth, and let rise in a warm spot for about 60 minutes or until doubled.
- Punch down the risen dough and turn onto a floured surface. Shape into a log, cut into pieces, and roll each into a ball before placing in a greased baking dish.
- Cover the rolls and let rise again for another 30 minutes.
- Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes until golden brown.
- Cool slightly before serving, adding a touch of vegan butter while warm.
Notes
Ensure real ube is used instead of extract for the best flavor. Over-kneading can lead to dense rolls.
