Delightful and colorful vegan rolls made with ube (purple yam) and coconut milk, perfect for any occasion.
Ingredients

- 1 cup ube (purple yam), mashed
- 4 cups all-purpose flour
- 1 cup coconut milk
- ½ cup sugar
- 2 ¼ tsp instant yeast
- 1 tsp salt
- ¼ cup vegan butter or oil
Instructions
- Prepare the ube: Peel and boil until tender; then mash until smooth.
- Make the dough: Mix flour, yeast, sugar, and salt in a bowl. In another bowl, combine mashed ube, coconut milk, and melted vegan butter. Mix both until a dough forms.
- Knead the dough: Knead on a floured surface for about 6-8 minutes until smooth and elastic.
- Let it rise: Place in oiled bowl, cover, and let it rise for about 60 minutes, until doubled in size.
- Shape the rolls: Punch down, divide into pieces, and shape into balls. Place on a lined baking tray.
- Second rise: Cover and let rise for another 30 minutes.
- Preheat and bake: Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
- Cool and enjoy: Allow rolls to cool slightly before serving.
Notes
Use fresh ube for better flavor; substitute with sweet potatoes if needed. Let rolls cool before serving for best texture.
