Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and sugar in a large mixing bowl until light and fluffy.
- Add eggs one at a time followed by vanilla extract, scraping down the sides as necessary.
- Gradually add in the flour and gelatin, stirring until just combined.
- Fold in the sprinkles and any optional additions like nuts or chocolate chips.
- Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
