- 1/2 cup fresh basil, chopped

Instructions
- Sauté the onion and garlic in a pot with olive oil over medium heat until fragrant.
- Add the diced chicken and cook until no longer pink, about 6-8 minutes.
- Pour in the chicken broth and bring to a gentle simmer.
- Mix in the mushrooms and spinach, cooking until wilted.
- Combine ricotta and cream in a bowl and gradually stir into the soup until smooth.
- Add the herbs and adjust seasoning; simmer for an additional 5-10 minutes.
- Finish with a generous portion of mozzarella under a broiler until bubbly and golden.
- Serve warm, garnished with herbs and enjoy!
