Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 8 oz white chocolate, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh raspberries

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare a 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter; press into the bottom of the pan and bake for 10 minutes.
  3. In a large bowl, beat cream cheese and sugar until smooth; add melted white chocolate, vanilla, and eggs, mixing until fully incorporated.
  4. Gently fold in raspberries, being careful not to crush them too much.
  5. Pour the cheesecake filling over the crust and bake for 25 to 30 minutes until the edges are set.
  6. Allow to cool at room temperature, then refrigerate for at least 4 hours or overnight.
  7. Lift the bars out using the parchment, slice into squares, and serve.
