- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 8 oz white chocolate, melted
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups fresh raspberries
Instructions
- Preheat your oven to 325°F (160°C) and prepare a 9×9-inch baking pan with parchment paper.
- In a mixing bowl, combine graham cracker crumbs and melted butter; press into the bottom of the pan and bake for 10 minutes.
- In a large bowl, beat cream cheese and sugar until smooth; add melted white chocolate, vanilla, and eggs, mixing until fully incorporated.
- Gently fold in raspberries, being careful not to crush them too much.
- Pour the cheesecake filling over the crust and bake for 25 to 30 minutes until the edges are set.
- Allow to cool at room temperature, then refrigerate for at least 4 hours or overnight.
- Lift the bars out using the parchment, slice into squares, and serve.

For a gluten-free version, substitute with gluten-free graham cracker crumbs.
