Instructions

  1. Preheat your oven to 350°F (175°C) and grease a rectangular baking pan.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing thoroughly after each.
  4. Sift together the flour and baking powder, and gradually incorporate into the butter mixture, alternating with milk.
  5. Stir in the cherries and pistachios until evenly distributed.
  6. Pour the batter into the prepared pan and smooth out.
  7. Bake for 30 to 35 minutes or until golden brown and a toothpick comes out clean.
  8. Mix the icing ingredients until smooth and drizzle over the cooled slice.
  9. Garnish with more chopped pistachios and cherries if desired.
