Ingredients

  • ½ cup chopped hazelnuts (toasted)
  • ½ cup chopped dried apricots
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 2 ½ cups vegetable or chicken broth
  • Fresh herbs (thyme, parsley, or sage)
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water to remove impurities.
  2. In a large skillet, heat olive oil or butter over medium heat. Add chopped onion and minced garlic, sauté until translucent (about 5 minutes).
  3. Add toasted hazelnuts to the skillet and toast them lightly for an additional 2-3 minutes.
  4. Pour in the rinsed wild rice and broth, add fresh herbs, bring to a gentle boil, then cover and simmer for 45-50 minutes until rice is tender and broth absorbed.
  5. Stir in chopped dried apricots, adjust salt and pepper, and let rest for 10 minutes.
  6. Fluff with a fork, serve warm, garnished with fresh herbs.

Notes

For a lighter option, substitute quinoa for wild rice. Use walnuts or almonds in place of hazelnuts, and dried cherries or cranberries instead of apricots for a twist.
