  • 2 lbs pork shoulder, cut into bite-sized chunks
  • 4 medium Yukon Gold or Russet potatoes, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 large carrots, diced
  • 4 cups chicken or vegetable broth
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme
  • Fresh parsley for garnish

Instructions

  1. Prep the ingredients. Chop the pork and season generously with salt and pepper.
  2. Heat a large pot over medium-high heat and drizzle with olive oil.
  3. Add the pork in batches, searing until golden brown, about 3-4 minutes per side.
  4. Transfer the browned pork to a plate.
  5. Reduce the heat and add diced onions, stirring until translucent.
  6. Incorporate minced garlic and sauté until fragrant.
  7. Toss in the diced carrots and cook until they soften slightly.
  8. Return the pork to the pot, then add potatoes, spices, and broth.
  9. Bring to a gentle boil, then lower the heat, cover, and simmer for at least 60 minutes.
  10. Occasionally stir and add broth if it thickens too much.
  11. Taste and adjust seasoning as needed before serving.

Notes

This stew can be customized with various vegetables or herbs based on personal preference. It freezes well for up to 3 months.
