- 2 lbs pork shoulder, cut into bite-sized chunks
- 4 medium Yukon Gold or Russet potatoes, chopped
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 large carrots, diced
- 4 cups chicken or vegetable broth
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp nutmeg
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 tbsp fresh thyme
- Fresh parsley for garnish
Instructions
- Prep the ingredients. Chop the pork and season generously with salt and pepper.
- Heat a large pot over medium-high heat and drizzle with olive oil.
- Add the pork in batches, searing until golden brown, about 3-4 minutes per side.
- Transfer the browned pork to a plate.
- Reduce the heat and add diced onions, stirring until translucent.
- Incorporate minced garlic and sauté until fragrant.
- Toss in the diced carrots and cook until they soften slightly.
- Return the pork to the pot, then add potatoes, spices, and broth.
- Bring to a gentle boil, then lower the heat, cover, and simmer for at least 60 minutes.
- Occasionally stir and add broth if it thickens too much.
- Taste and adjust seasoning as needed before serving.
Notes
This stew can be customized with various vegetables or herbs based on personal preference. It freezes well for up to 3 months.
