- 1 lb boneless chicken (breast or thighs)
- 2 fresh limes
- 1/4 cup fresh cilantro, chopped
- 1 ripe avocado
- 1 cup jasmine rice
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1 tsp cumin
- 1 tsp chili powder
- 2 tbsp cooking oil (olive or avocado)
- 1¾ cups water
Instructions
- Marinate the Chicken: In a bowl, combine the juice of two limes, minced garlic, chopped cilantro, and spices (1 tsp each of salt, pepper, cumin, and chili powder). Add the chicken and coat it well. Let it sit for at least 30 minutes.
- Cook the Rice: Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 1¾ cups of water and a pinch of salt. Bring to a boil, reduce to low heat, cover, and cook for about 15 minutes. Let it rest for 10 minutes before fluffing with a fork.
- Sauté the Chicken: Heat 2 tablespoons of oil in a skillet over medium-high heat. Add the marinated chicken and sauté for 6-7 minutes on each side until cooked through and golden brown.
- Prepare the Avocado: Slice your ripe avocado just before serving. A squeeze of lime juice over the slices can keep them fresh.
- Serve: Plate the jasmine rice, top with chicken, and add avocado slices. Garnish with cilantro and lime wedges if desired.
Notes
For best flavor, marinate the chicken longer if possible. Serve with a fresh salad or grilled veggies for a complete meal.
