Ingredients

  • Short pasta (penne or farfalle)
  • Ricotta cheese
  • Fresh spinach
  • Lemon (zest and juice)
  • Garlic (minced)
  • Olive oil
  • Salt and pepper

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add fresh spinach to the skillet and stir until just wilted.
  4. In a mixing bowl, combine ricotta cheese, lemon zest, lemon juice, salt, and pepper; mix until smooth.
  5. Drain pasta and add to the skillet with spinach and garlic.
  6. Mix in the ricotta mixture, adding reserved pasta water gradually to achieve desired creaminess.
  7. Taste and adjust seasoning as needed, then serve hot.

Notes
