Ingredients
- Short pasta (penne or farfalle)
- Ricotta cheese
- Fresh spinach
- Lemon (zest and juice)
- Garlic (minced)

Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add fresh spinach to the skillet and stir until just wilted.
- In a mixing bowl, combine ricotta cheese, lemon zest, lemon juice, salt, and pepper; mix until smooth.
- Drain pasta and add to the skillet with spinach and garlic.
- Mix in the ricotta mixture, adding reserved pasta water gradually to achieve desired creaminess.
- Taste and adjust seasoning as needed, then serve hot.
Notes
