- 1 Spaghetti Squash
- 2 tablespoons Olive Oil
- 3 cloves Garlic, minced
- 1 cup Fresh Herbs (Basil or Parsley)
- 1/2 cup Parmesan Cheese, grated
- Optional: Red pepper flakes, Cherry tomatoes
Instructions
- Preheat your air fryer to 400°F. Wash the squash, cut it in half lengthwise, and scoop out the seeds. Drizzle with olive oil and sprinkle with salt and pepper.
- Air fry the squash, cut side up for 20-25 minutes until tender.
- While the squash cooks, heat a tablespoon of olive oil in a skillet over medium heat. Add garlic and chopped mushrooms, cooking until golden and fragrant.
- Once done, use a fork to scrape the insides of the squash into strands. Toss with garlic mushrooms and fresh herbs.
- Serve topped with Parmesan cheese and a dash of red pepper flakes.
Notes
Use different types of mushrooms like cremini or shiitake for added flavor. Store leftovers in an airtight container for up to three days.
