Ingredients

  • 4 cups vegetable broth

  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tablespoons butter
  • Salt, to taste
  • Pepper, to taste
  • Lemon juice, optional

Instructions

  1. Chop the onion and garlic finely.
  2. melt butter in a large pot over medium heat, add the onion and garlic, and cook gently until fragrant.
  3. Add the sliced mushrooms and sauté until browned.
  4. Toss in the carrots and celery, stirring to combine.

  7. Stir in the heavy cream and adjust seasoning with salt and pepper.
  8. Squeeze in lemon juice if desired.
