- 2 carrots, diced
- 2 celery stalks, diced
- 2 tablespoons butter

Instructions
- Chop the onion and garlic finely.
- melt butter in a large pot over medium heat, add the onion and garlic, and cook gently until fragrant.
- Add the sliced mushrooms and sauté until browned.
- Toss in the carrots and celery, stirring to combine.
- Pour in the vegetable broth and bring to a gentle simmer.
- Cook for about 20 minutes or until the vegetables are tender.
- Stir in the heavy cream and adjust seasoning with salt and pepper.
- Squeeze in lemon juice if desired.
