Deliciously spiced Apple Cider Cookies that celebrate the essence of autumn with each bite.

- 1 cup apple cider
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and mix well until fully incorporated.
- Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Pour in the apple cider and fold gently into the dough.
- Scoop rounded balls of dough onto prepared baking sheets, spacing them about two inches apart.
- Bake for about 10–12 minutes or until edges are lightly golden.
- Remove from the oven and let sit on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Enjoy with a cup of tea, coffee, or warm vanilla ice cream!
Notes
Use room-temperature ingredients for better mixing. Allowing the dough to chill for 30 minutes can enhance chewiness.
