Ingredients

- 1 cup farro
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms (cremini, shiitake, or portobello), sliced
- 1 tablespoon fresh thyme (or less if using dried)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Sauté the onion in olive oil over medium heat until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute.
- Cook the mushrooms until golden, about 8-10 minutes.
- Combine the sautéed mixture with the rinsed farro, vegetable broth, and thyme in a large bowl. Season with salt and pepper.
- Transfer the mixture into a baking dish, cover with foil, and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the farro is fluffy and tender.
- Finish with a sprinkle of fresh thyme before serving.
Notes
For added texture, consider topping the dish with toasted walnuts or pine nuts before serving.
