Ingredients

  • 1 cup farro
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms (cremini, shiitake, or portobello), sliced
  • 1 tablespoon fresh thyme (or less if using dried)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté the onion in olive oil over medium heat until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute.
  4. Cook the mushrooms until golden, about 8-10 minutes.
  5. Combine the sautéed mixture with the rinsed farro, vegetable broth, and thyme in a large bowl. Season with salt and pepper.
  6. Transfer the mixture into a baking dish, cover with foil, and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes until the farro is fluffy and tender.
  8. Finish with a sprinkle of fresh thyme before serving.

Notes

For added texture, consider topping the dish with toasted walnuts or pine nuts before serving.
