Ingredients

  • 1 cup granulated sugar
  • ½ cup cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • A pinch of salt
  • 2 large eggs
  • 1 cup buttermilk (or regular milk with vinegar)
  • ½ cup melted butter (or margarine/coconut oil)
  • 1 cup crushed Oreos
  • ½ cup mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cupcake liners or grease it.
  2. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt until combined.
  3. In another bowl, mix together eggs, buttermilk, and melted butter until combined.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. Fold in the crushed Oreos and chocolate chips, if using.
  6. Spoon the batter into the muffin tin, filling each cup about ¾ full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack.
