Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- A pinch of salt
- 2 large eggs
- 1 cup buttermilk (or regular milk with vinegar)
- ½ cup melted butter (or margarine/coconut oil)
- 1 cup crushed Oreos
- ½ cup mini chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with cupcake liners or grease it.
- In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt until combined.
- In another bowl, mix together eggs, buttermilk, and melted butter until combined.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined.
- Fold in the crushed Oreos and chocolate chips, if using.
- Spoon the batter into the muffin tin, filling each cup about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
