Ingredients

  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup yogurt (or coconut milk)
  • 1/4 cup honey (or maple syrup)
  • 1 tablespoon lemon juice

Instructions

  1. Prepare Your Berries: Rinse your berries thoroughly and chop larger strawberries into smaller pieces. Set them aside.
  2. Blend the Base: In a blender, combine your yogurt (or coconut milk) with honey and lemon juice. Blend until smooth and creamy.
  3. Add the Berries: Carefully mix in the chopped berries and blend lightly, just enough to combine without turning the mixture entirely pink.
  4. Pour into Molds: Pour the mixture into silicone molds or paper cups. Tap them gently on the counter to remove any air bubbles.
  5. Freeze: Insert sticks and freeze for at least 240-360 minutes, or overnight for best results.
  6. Enjoy: To remove the ice cream bars, run the molds under warm water for a few seconds.
