Delightful and refreshing Berry Ice Cream Bars made with fresh berries, yogurt, and honey, perfect for summer gatherings.
Ingredients
Scale
- 1 cup strawberries, chopped
- 1 cup blueberries
- 1 cup raspberries
- 1 cup yogurt (or coconut milk)
- 1/4 cup honey (or maple syrup)
- 1 tablespoon lemon juice
Instructions
- Prepare Your Berries: Rinse your berries thoroughly and chop larger strawberries into smaller pieces. Set them aside.
- Blend the Base: In a blender, combine your yogurt (or coconut milk) with honey and lemon juice. Blend until smooth and creamy.
- Add the Berries: Carefully mix in the chopped berries and blend lightly, just enough to combine without turning the mixture entirely pink.
- Pour into Molds: Pour the mixture into silicone molds or paper cups. Tap them gently on the counter to remove any air bubbles.
- Freeze: Insert sticks and freeze for at least 240-360 minutes, or overnight for best results.
- Enjoy: To remove the ice cream bars, run the molds under warm water for a few seconds.
