Ingredients

  • 1 cup buttermilk

  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blackberries
  • 1 cup heavy cream (for ganache)
  • 8 oz dark chocolate (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  3. Beat the butter and sugar in another bowl until pale and fluffy.
  4. Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with buttermilk until the batter is smooth.
  6. Fold in the blackberries gently, being careful not to overmix.
  7. Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool the cakes in the pans for 10 minutes before transferring them to wire racks.
  9. Heat heavy cream in a saucepan until steaming, then pour it over chopped dark chocolate and stir until smooth.
  10. Assemble by layering one cake on a serving plate, spreading ganache between layers, and pouring remaining ganache over the top.

Notes

Allowing ingredients to reach room temperature before mixing helps achieve a smoother batter.
