Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Whisk together flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
- Beat the butter and sugar in another bowl until pale and fluffy.
- Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
- Gradually mix in the dry ingredients, alternating with buttermilk until the batter is smooth.
- Fold in the blackberries gently, being careful not to overmix.
- Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes before transferring them to wire racks.
- Heat heavy cream in a saucepan until steaming, then pour it over chopped dark chocolate and stir until smooth.
- Assemble by layering one cake on a serving plate, spreading ganache between layers, and pouring remaining ganache over the top.
Notes
Allowing ingredients to reach room temperature before mixing helps achieve a smoother batter.
