Description

A delightful dessert that combines layers of buttery cake, airy yogurt mousse, and a tart blueberry compote, capturing the essence of spring.


Ingredients

  • 2 cups fresh blueberries
  • 1 cup Greek yogurt
  • 2 cups cake flour
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup unsalted butter
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 cup milk
  • Juice and zest of 1 lemon
  • 2 tablespoons granulated sugar (for compote)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
  2. Cream 1 cup of unsalted butter with 1 cup of granulated sugar until light and fluffy.
  3. Add in 4 large eggs, one at a time, mixing well after each addition.
  4. Stir in 2 teaspoons of vanilla extract.
  5. Combine 2 cups of cake flour with 2 teaspoons of baking powder, and a pinch of salt in another bowl.
  6. Gradually add the dry ingredients into the creamed mixture, alternating with 1 cup of milk until just combined.
  7. Fold in the zest of one lemon and a splash of its juice.
  8. Divide the batter evenly between the prepared pans and smooth the tops.
  9. Bake for about 25-30 minutes or until a toothpick comes out clean.
  10. Prepare the mousse by blending 2 cups of blueberries with 2 tablespoons of sugar and simmering over medium heat for about 10 minutes.
  11. Cool and blend until smooth.
  12. Assemble the cake by spreading yogurt mousse on the first layer, followed by blueberry compote, then top with the second layer and frost with remaining mousse.
  13. Chill for at least an hour before serving.
