- 2 cups fresh blueberries
- 1 cup Greek yogurt
- 2 cups cake flour
- 1 cup granulated sugar
- 4 large eggs
- 1 cup unsalted butter

- 1 cup milk
- Juice and zest of 1 lemon
- 2 tablespoons granulated sugar (for compote)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
- Cream 1 cup of unsalted butter with 1 cup of granulated sugar until light and fluffy.
- Add in 4 large eggs, one at a time, mixing well after each addition.
- Stir in 2 teaspoons of vanilla extract.
- Combine 2 cups of cake flour with 2 teaspoons of baking powder, and a pinch of salt in another bowl.
- Gradually add the dry ingredients into the creamed mixture, alternating with 1 cup of milk until just combined.
- Fold in the zest of one lemon and a splash of its juice.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for about 25-30 minutes or until a toothpick comes out clean.
- Prepare the mousse by blending 2 cups of blueberries with 2 tablespoons of sugar and simmering over medium heat for about 10 minutes.
- Cool and blend until smooth.
- Assemble the cake by spreading yogurt mousse on the first layer, followed by blueberry compote, then top with the second layer and frost with remaining mousse.
- Chill for at least an hour before serving.
