Ingredients

  • 4 bone-in short ribs
  • 2 medium yellow onions, chopped
  • 4 cloves of garlic, minced
  • 1 cup dry red wine (e.g. Cabernet Sauvignon)
  • 2 cups beef broth
  • 2 carrots, chopped
  • 2 stalks of celery, chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Oil for searing

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season short ribs with salt and pepper; brown in a pot with oil over medium-high heat.
  3. Remove ribs; sauté onions, carrots, and celery until softened, then add garlic.
  4. Add tomato paste, cook for 1 minute, then deglaze with red wine, scraping the pot.
  5. Return the ribs to the pot, add beef broth, thyme, and bay leaves, submerging the ribs halfway.
  6. Cover and braise in the oven for 3 to 4 hours until tender.
  7. Let the ribs rest for 15 minutes before serving.
