- 2 cups fresh cherries, pitted
- 1/2 cup brandy
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup chocolate chunks
Instructions
- Prepare the cherries: Wash and pit the fresh cherries, then combine them in a bowl with brandy and let soak for at least one hour.
- Mix the ice cream base: In a separate bowl, whisk together heavy cream, whole milk, granulated sugar, and vanilla extract until the sugar dissolves.
- Blend in the cherries: Gently fold the soaked cherries and their liquid into the cream mixture and stir in the chocolate chunks.
- Chill the mixture: Cover and refrigerate the base for at least two hours or overnight.
- Churn the ice cream: Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions until soft-serve consistency is achieved, about 20–30 minutes.
- Freeze to firm up: Transfer churned ice cream to an airtight container and freeze for at least four hours.
- Serve and enjoy: Remove ice cream from the freezer 10-15 minutes before serving for easier scooping.
Notes
Feel free to substitute with frozen cherries if fresh ones aren’t available. For a lighter version, use half-and-half instead of heavy cream.
