- 12 large pasta shells
- 8 oz burrata cheese
- 1 cup mushrooms (shiitake, cremini, or button), chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 tsp crushed red pepper flakes
- 1 tbsp lemon juice
- 1 cup marinara sauce
- 1/2 cup mozzarella cheese, shredded (optional)
Instructions
- Cook the pasta shells: Boil a large pot of salted water and cook the pasta shells until al dente. Drain and toss with olive oil.
- Prepare the filling: In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, then add mushrooms and sauté until golden.
- Mix in the cheese: Remove the skillet from heat and stir in torn burrata, fresh herbs, crushed red pepper flakes, and lemon juice.
- Stuff the shells: Fill each pasta shell with the burrata mixture using a teaspoon.
- Arrange and bake: Preheat oven to 375°F (190°C). Spread marinara sauce in a baking dish and arrange stuffed shells, topping with remaining sauce and cheese if desired.
- Bake to perfection: Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes until bubbly.
- Serve and enjoy: Garnish with fresh herbs and a drizzle of olive oil.
Notes
Feel free to customize the filling with other cheeses or vegetables. Ensure mushrooms are not overcooked for the best texture.
