Description

A comforting dish featuring giant pasta shells stuffed with creamy burrata cheese, sautéed mushrooms, and fresh herbs, baked to perfection.


Ingredients

  • 12 large pasta shells
  • 8 oz burrata cheese
  • 1 cup mushrooms (shiitake, cremini, or button), chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp crushed red pepper flakes
  • 1 tbsp lemon juice
  • 1 cup marinara sauce
  • 1/2 cup mozzarella cheese, shredded (optional)

Instructions

  1. Cook the pasta shells: Boil a large pot of salted water and cook the pasta shells until al dente. Drain and toss with olive oil.
  2. Prepare the filling: In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, then add mushrooms and sauté until golden.
  3. Mix in the cheese: Remove the skillet from heat and stir in torn burrata, fresh herbs, crushed red pepper flakes, and lemon juice.
  4. Stuff the shells: Fill each pasta shell with the burrata mixture using a teaspoon.
  5. Arrange and bake: Preheat oven to 375°F (190°C). Spread marinara sauce in a baking dish and arrange stuffed shells, topping with remaining sauce and cheese if desired.
  6. Bake to perfection: Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes until bubbly.
  7. Serve and enjoy: Garnish with fresh herbs and a drizzle of olive oil.

Notes

Feel free to customize the filling with other cheeses or vegetables. Ensure mushrooms are not overcooked for the best texture.
