Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup crushed candy canes
Instructions

- Cream together the butter and sugar until light and fluffy, about 3-4 minutes.
- Add in the egg and both extracts, mixing until well combined.
- Combine the dry ingredients (flour, baking powder, salt) in a separate bowl, then gradually mix into the wet ingredients until just combined.
- Fold in the crushed candy canes, reserving some for topping.
- Scoop out the dough onto a lined baking sheet and sprinkle with reserved candy canes.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Chilling the dough for a half-hour can help the flavors meld and make the cookies thicker.
