Ingredients

- 400g Pasta (spaghetti, fettuccine, or gluten-free)
- 3 Leeks, cleaned and sliced
- 250g Mushrooms (cremini or shiitake), sliced
- 3 cloves Garlic, minced
- 2 tablespoons Butter
- 2 tablespoons Olive Oil
- 100g Parmesan Cheese, grated
- Fresh Thyme or Parsley, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the Pasta in a large pot of salted water according to package instructions until al dente. Reserve a cup of pasta water, then drain and set aside.
- Prepare the Leeks by cleaning and slicing them, ensuring to separate the layers to remove any grit.
- Sauté the Leeks in a large skillet with Butter and Olive Oil over medium heat until soft and caramelized, about 8-10 minutes.
- Add the Mushrooms and Garlic, cooking until the mushrooms are golden and the garlic is fragrant, about 5-7 minutes.
- Combine the cooked pasta into the skillet, adding reserved pasta water and generous amounts of Parmesan. Toss gently to coat.
- Season with Salt, Pepper, and fresh herbs, serving immediately garnished with extra cheese and cracked black pepper.
