Ingredients

  • 400g Pasta (spaghetti, fettuccine, or gluten-free)
  • 3 Leeks, cleaned and sliced
  • 250g Mushrooms (cremini or shiitake), sliced
  • 3 cloves Garlic, minced
  • 2 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 100g Parmesan Cheese, grated
  • Fresh Thyme or Parsley, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the Pasta in a large pot of salted water according to package instructions until al dente. Reserve a cup of pasta water, then drain and set aside.
  2. Prepare the Leeks by cleaning and slicing them, ensuring to separate the layers to remove any grit.
  3. Sauté the Leeks in a large skillet with Butter and Olive Oil over medium heat until soft and caramelized, about 8-10 minutes.
  4. Add the Mushrooms and Garlic, cooking until the mushrooms are golden and the garlic is fragrant, about 5-7 minutes.
  5. Combine the cooked pasta into the skillet, adding reserved pasta water and generous amounts of Parmesan. Toss gently to coat.
  6. Season with Salt, Pepper, and fresh herbs, serving immediately garnished with extra cheese and cracked black pepper.
