- Baguette or ciabatta
- 2 large yellow onions
- 8 oz cremini, shiitake, or portobello mushrooms
- 2 tbsp olive oil
- 1 tbsp butter
- Fresh herbs (thyme or rosemary)
- Salt and pepper to taste
- Optional: Goat cheese or shaved Parmesan
Instructions
- Prepare your ingredients: Start by slicing your baguette into ½-inch thick slices. Lay them on a baking sheet and brush one side with olive oil.
- Toast the bread: Preheat the oven to 400°F (200°C). Toast the bread for about 10-12 minutes, or until golden and crisp.
- Caramelize the onions: Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the sliced onions. Cook slowly, stirring occasionally, for 20-30 minutes until golden brown.
- Sauté the mushrooms: In the same skillet, add more olive oil, then toss in your sliced mushrooms. Cook until golden and seasoned with salt and pepper.
- Combine and season: Mix the onions and mushrooms in the skillet, adding fresh herbs and any additional seasoning.
- Assemble your crostini: Top each slice of toasted bread with a generous helping of the mixture.
- Garnish & serve: Finish with cheese and balsamic glaze if desired. Serve warm.
