- 1 can (400ml) coconut milk
- 2 tablespoons curry powder
- 3 cloves garlic, minced
- 1 inch ginger, minced
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro and green onions for garnish
Instructions
- Marinate the salmon in lime juice, salt, and pepper for about 15 minutes.
- Add oil to a skillet over medium heat, then sauté minced garlic and ginger for about 1 minute.
- Whisk in coconut milk and curry powder, allowing it to come to a gentle simmer.
- Add the marinated salmon fillets and cover; cook for about 8-10 minutes until flaky.
- Toss in any additional vegetables halfway through cooking.
