- 8 oz fettuccine or spaghetti
- 1 cup dry champagne or sparkling wine
- 1 cup heavy cream
- 3 cloves fresh garlic, minced
- 8 oz cremini mushrooms, sliced
- 1 cup finely grated Parmesan cheese
- 2 tbsp butter
- Fresh parsley or thyme, chopped (for garnish)
Instructions
- Cook the pasta: In a large pot, bring salted water to a rolling boil. Add your pasta and cook according to package directions until al dente. Reserve a cup of pasta water, then drain and set aside.
- Sauté garlic and mushrooms: In a large skillet, melt two tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about a minute. Toss in sliced mushrooms and cook until they’re golden and tender.
- Create the sauce: Pour in the champagne, stirring to deglaze the pan. Let it simmer for a couple of minutes until reduced slightly. Reduce the heat and whisk in the heavy cream, stirring gently.
- Combine cheese and pasta: Once the cream starts to bubble, add grated Parmesan cheese, stirring continuously until it melts into the sauce.
- Toss the pasta: Add the drained pasta to the sauce, tossing gently to coat every strand. Season with salt, pepper, and a sprinkle of chopped herbs.
- Serve hot: Plate your pasta and garnish generously with additional Parmesan and herbs.
