Cheesy Chicken & Potato Tarts

Description

Crispy, spicy, and seriously addictive tarts filled with seasoned chicken, creamy cheese, and delicious potatoes.


Ingredients

  • 1 lb Boneless, skinless chicken (breast or thighs)
  • 2 cups Potatoes (Russets or Yukon golds)
  • 1 cup Cheddar cheese (shredded)
  • 1 tsp Fresh parsley (chopped)
  • 1 tsp Paprika
  • ½ tsp Cayenne pepper
  • 1 tsp Garlic powder
  • 1 package Puff pastry (store-bought)
  • 1 Egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat a drizzle of olive oil in a skillet over medium heat. Add chopped chicken and season with salt, pepper, paprika, and cayenne. Cook until chicken is browned and cooked through.
  3. Remove from heat and let it cool slightly. Dice cooked potatoes and fold them in with the chicken.
  4. Add in the cheese and fresh herbs, mixing well to combine.
  5. Lightly flour your countertop and roll out the pastry dough to about 1/8 inch thick.
  6. Cut circles out of the dough using a round cutter or glass.
  7. Place a spoonful of filling in the center of each circle. Fold over to create half-moon shapes and pinch the edges to seal.
  8. Beat an egg and brush the tops of tarts for a golden finish.
  9. Bake for 20-25 minutes, until golden brown and crispy.
  10. Serve warm or allow to cool slightly before presenting on a platter.

Notes

For a lighter option, serve with a fresh side salad. Enjoy leftovers reheated in the oven for best texture.
