  • 1 cup long-grain white rice
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 2 cups beef or chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: mixed frozen vegetables (peas, corn, bell peppers)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large casserole dish with cooking spray.
  2. Cook the ground beef in a large skillet over medium heat until browned. Add diced onions and minced garlic, cooking until the onions are translucent. Drain excess fat.
  3. Mix in the uncooked rice, cream of mushroom soup, and broth. Bring to a simmer.
  4. Season the mixture with salt, pepper, thyme, and paprika for extra flavor.
  5. Combine everything evenly; transfer it to the greased casserole dish.
  6. Add the shredded cheese on top.
  7. Bake covered with foil for 30 minutes, then uncover and bake for an additional 10-15 minutes until bubbly and golden brown.
  8. Let it rest before serving to allow flavors to meld.
