- 1 pound ground beef (80/20 lean to fat)
- 1 cup long-grain white rice
- 2 cups sharp cheddar cheese, shredded
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can cream of mushroom soup
- 2 cups beef or chicken broth
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: mixed frozen vegetables (peas, corn, bell peppers)
Instructions
- Preheat your oven to 350°F (175°C). Grease a large casserole dish with cooking spray.
- Cook the ground beef in a large skillet over medium heat until browned. Add diced onions and minced garlic, cooking until the onions are translucent. Drain excess fat.
- Mix in the uncooked rice, cream of mushroom soup, and broth. Bring to a simmer.
- Season the mixture with salt, pepper, thyme, and paprika for extra flavor.
- Combine everything evenly; transfer it to the greased casserole dish.
- Add the shredded cheese on top.
- Bake covered with foil for 30 minutes, then uncover and bake for an additional 10-15 minutes until bubbly and golden brown.
- Let it rest before serving to allow flavors to meld.
