These enchiladas are a cheesy, spicy delight that brings warmth and joy to the dinner table.

- 2 cups shredded chicken (breast or thighs)
- 2–3 jalapeños, diced
- 1 cup Monterey Jack cheese, shredded
- 1 cup sharp cheddar cheese, shredded
- 1 cup enchilada sauce
- 8 corn tortillas
- 2 tablespoons olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat, sauté onions and garlic until fragrant.
- Add the shredded chicken, jalapeños, and spices to the skillet and sauté for 5 minutes.
- Pour a little enchilada sauce into the bottom of a baking dish.
- Fill each tortilla with the chicken mixture and roll them tightly.
- Place rolled tortillas seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with cheese.
- Bake covered for 20 minutes, then uncover and bake for an additional 10 minutes.
- Garnish with cilantro and avocado, and serve.
Notes
Keep tortillas warm to avoid cracking during assembly. Adjust spice levels to personal preference.
