These enchiladas are a cheesy, spicy delight that brings warmth and joy to the dinner table.


Ingredients

  • 2 cups shredded chicken (breast or thighs)
  • 23 jalapeños, diced
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat, sauté onions and garlic until fragrant.
  3. Add the shredded chicken, jalapeños, and spices to the skillet and sauté for 5 minutes.
  4. Pour a little enchilada sauce into the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture and roll them tightly.
  6. Place rolled tortillas seam-side down in the baking dish.
  7. Pour remaining enchilada sauce over the top and sprinkle with cheese.
  8. Bake covered for 20 minutes, then uncover and bake for an additional 10 minutes.
  9. Garnish with cilantro and avocado, and serve.

Notes

Keep tortillas warm to avoid cracking during assembly. Adjust spice levels to personal preference.
