A vibrant and zesty Chicken Shawarma Rice Bowl with spiced chicken, fragrant rice, and fresh herbs.
Ingredients
Scale
- 2 lbs boneless chicken (breast or thighs)
- 3 tbsp shawarma spice blend (cumin, paprika, turmeric, coriander, garlic powder)
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 cups basmati or jasmine rice
- 2 tbsp olive oil or melted butter
- 1 bell pepper, sliced
- 1 cucumber, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup yogurt (garlic yogurt or tzatziki)
- Juice of 1 lemon
Instructions
- Marinate the Chicken: Combine the shawarma spice blend with olive oil, minced garlic, and salt. Coat the chicken evenly and let it marinate for at least an hour.
- Cook the Rice: Rinse your rice until the water runs clear. Cook it according to package instructions, adding a little salt and olive oil for flavor.
- Sauté the Chicken: Heat a skillet over medium-high heat with a splash of olive oil. Add the marinated chicken and let it sear, about 6-7 minutes per side.
- Prepare Your Vegetables: Chop up your veggies while the chicken cooks.
- Build Your Bowl: Layer the rice first, then add the sautéed chicken, followed by an assortment of veggies. Top with garlic yogurt and fresh herbs.
- Finish with a Squeeze of Lemon: Add lemon juice to brighten the flavors.
Notes
