Ingredients

  • 4 cloves garlic, minced

  • 2 cups basmati or jasmine rice
  • 2 tbsp olive oil or melted butter
  • 1 bell pepper, sliced
  • 1 cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup yogurt (garlic yogurt or tzatziki)
  • Juice of 1 lemon

Instructions

  1. Marinate the Chicken: Combine the shawarma spice blend with olive oil, minced garlic, and salt. Coat the chicken evenly and let it marinate for at least an hour.
  2. Cook the Rice: Rinse your rice until the water runs clear. Cook it according to package instructions, adding a little salt and olive oil for flavor.
  3. Sauté the Chicken: Heat a skillet over medium-high heat with a splash of olive oil. Add the marinated chicken and let it sear, about 6-7 minutes per side.
  4. Prepare Your Vegetables: Chop up your veggies while the chicken cooks.
  5. Build Your Bowl: Layer the rice first, then add the sautéed chicken, followed by an assortment of veggies. Top with garlic yogurt and fresh herbs.
