Description

Ingredients

  • 2 cups cooked chicken (breast or thighs), diced
  • 2 cups creamy queso (store-bought or homemade)
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 2 cups tortilla chips, crushed
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the bell peppers and onions in a large skillet with olive oil for 5–7 minutes until soft.
  3. Add diced chicken and season with chili powder, cumin, garlic powder, and salt. Cook until browned, about 10 minutes.
  4. Mix in the queso until it’s melty and well combined.
  5. Combine crushed tortilla chips with the chicken and cheese mixture in a large bowl.
  6. Transfer the mixture to a greased baking dish, spreading evenly.
  7. Sprinkle additional queso or shredded cheese on top if desired.
  8. Bake for 20 minutes until bubbly and golden brown.
  9. Garnish with fresh cilantro before serving.

Notes

Allow the dish to cool for a few minutes before serving to help it hold its shape.
