- 2 cups cooked chicken (breast or thighs), diced
- 2 cups creamy queso (store-bought or homemade)
- 1 cup bell peppers, diced
- 1 cup onions, diced
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 2 cups tortilla chips, crushed
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the bell peppers and onions in a large skillet with olive oil for 5–7 minutes until soft.
- Add diced chicken and season with chili powder, cumin, garlic powder, and salt. Cook until browned, about 10 minutes.
- Mix in the queso until it’s melty and well combined.
- Combine crushed tortilla chips with the chicken and cheese mixture in a large bowl.
- Transfer the mixture to a greased baking dish, spreading evenly.
- Sprinkle additional queso or shredded cheese on top if desired.
- Bake for 20 minutes until bubbly and golden brown.
- Garnish with fresh cilantro before serving.
Notes
Allow the dish to cool for a few minutes before serving to help it hold its shape.
