Description

Delicious and festive Christmas pancakes made with cranberries and nuts, perfect for holiday brunch.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp baking powder
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 1/4 cups whole milk
  • 2 large eggs
  • 4 tbsp melted butter
  • 1 cup cranberries, fresh or frozen
  • 1/2 cup chopped nuts (walnuts or pecans)

Instructions

  1. In a large bowl, mix the flour, baking powder, sugar, cinnamon, and nutmeg.
  2. In a separate bowl, whisk together the milk, eggs, and melted butter until smooth.
  3. Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
  4. Carefully fold in the cranberries and chopped nuts.
  5. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake and cook for about 2-3 minutes until bubbles form on the surface.
  7. Gently flip the pancake and cook for another 2 minutes until golden brown.
  8. Serve immediately, drizzled with maple syrup and topped with extra cranberries and nuts if desired.

Notes

Let the batter rest for 10 minutes for fluffier pancakes. Adjust cooking heat as needed.
