Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 2 ½ cups all-purpose flour
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • 1 cup holiday-themed sprinkles
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until fluffy, about 3-4 minutes.
  3. Beat in the egg, vanilla, and almond extract, mixing well after each addition.
  4. Sift in the flour and baking powder, mixing until just combined.
  5. Fold in a generous amount of sprinkles, saving some for decorating the tops.
  6. Scoop tablespoons of dough onto the baking sheet, spaced about two inches apart. Flatten the tops slightly and sprinkle extra sprinkles on each cookie.
  7. Bake for 10-12 minutes until the edges are set and lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a dairy-free version, use vegan butter and flax eggs or applesauce in place of eggs. For gluten-free cookies, use a gluten-free flour blend.
