- 1 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 large egg
- 2 ½ cups all-purpose flour
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- 1 cup holiday-themed sprinkles
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until fluffy, about 3-4 minutes.
- Beat in the egg, vanilla, and almond extract, mixing well after each addition.
- Sift in the flour and baking powder, mixing until just combined.
- Fold in a generous amount of sprinkles, saving some for decorating the tops.
- Scoop tablespoons of dough onto the baking sheet, spaced about two inches apart. Flatten the tops slightly and sprinkle extra sprinkles on each cookie.
- Bake for 10-12 minutes until the edges are set and lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a dairy-free version, use vegan butter and flax eggs or applesauce in place of eggs. For gluten-free cookies, use a gluten-free flour blend.
