Ingredients

- 1 cup quinoa
- 1 cup fresh or dried cranberries
- 1–2 crisp apples (like Honeycrisp or Granny Smith)
- 1/2 small red onion
- Fresh parsley or mint
- 1/2 cup walnuts or pumpkin seeds
- 3 tablespoons olive oil
- Juice of 1 lemon
Instructions
- Rinse the quinoa under cold water to remove any bitter saponins.
- Cook the quinoa in a pot with 2 cups of water or broth for about 15 minutes, or until absorbed.
- Prepare other ingredients by chopping cranberries, apples, dicing red onion, and finely chopping herbs.
- Combine the cooked quinoa, cranberries, apples, red onion, nuts/seeds, and herbs in a large bowl.
- Dress the salad with a mixture of olive oil and lemon juice, then toss gently.
- Season with salt and pepper to taste and chill in the fridge for about 30 minutes.
Notes
Taste and adjust seasoning as needed; adding a touch of honey or maple syrup in the dressing can enhance sweetness.
