Ingredients

  • 1 cup quinoa
  • 1 cup fresh or dried cranberries
  • 12 crisp apples (like Honeycrisp or Granny Smith)
  • 1/2 small red onion
  • Fresh parsley or mint
  • 1/2 cup walnuts or pumpkin seeds
  • 3 tablespoons olive oil
  • Juice of 1 lemon

Instructions

  1. Rinse the quinoa under cold water to remove any bitter saponins.
  2. Cook the quinoa in a pot with 2 cups of water or broth for about 15 minutes, or until absorbed.
  3. Prepare other ingredients by chopping cranberries, apples, dicing red onion, and finely chopping herbs.
  4. Combine the cooked quinoa, cranberries, apples, red onion, nuts/seeds, and herbs in a large bowl.
  5. Dress the salad with a mixture of olive oil and lemon juice, then toss gently.
  6. Season with salt and pepper to taste and chill in the fridge for about 30 minutes.

Notes

Taste and adjust seasoning as needed; adding a touch of honey or maple syrup in the dressing can enhance sweetness.
